Apricot, apple & oat cookies

Porridge is a morning staple, but there are so many other ways to make use of power-packed oats, including these cookies. Dried apricots are full of iron and vitamins A and C and provide a natural sweetness. Makes 16.

Ingredients:

1 apple, peeled and grated
150g porridge oats
70g desiccated coconut
75g unsalted butter, melted
85ml maple syrup
1 tsp. pure vanilla extract
1 egg
85g dried apricots, chopped
50g dates, chopped
1 tbsp. chia seeds

Method:

  1. Preheat the oven to 200ºC (fan 180ºC/gas mark 6). Line a baking tray with baking parchment.
  2. Put the apple, oats, coconut, butter, maple syrup, vanilla and egg into a food processor. Whiz until roughly chopped.
  3. Add the apricots, dates and seeds. Pulse again until combined. Shape into 16 flat cookies.
  4. Place on the lined tray and bake for 10–12 minutes until pale golden, turning over halfway through. Cool on a wire rack. These will keep in a tin for up to 5 days.

Carrot, courgette & sweetcorn muffins

Introducing her nutritious savoury muffins with a trio of veggies. Full of flavour and ideal for fussy eaters, little ones will love pulling these apart and munching away. Makes 12.

Ingredients:

280g self-raising flour
2 tsp. baking powder
3 eggs
175ml milk
65g unsalted butter, melted
100g Parmesan cheese, grated
150g courgette, grated
75g carrot, peeled and grated
4 tbsp. tinned sweetcorn
2 spring onions, sliced
1 tbsp. chopped fresh thyme

Method:

  1. Preheat the oven to 200ºC (fan 180ºC/gas mark 6). Line muffin tin with the paper cases.
  2. Place the flour, baking powder and eggs into a mixing bowl. Add the milk and butter. Whisk until smooth. Fold in 80g of the Parmesan cheese and the remaining ingredients, mix well.
  3. Spoon the mixture into the muffin cases and sprinkle with the remaining cheese. Bake for 25-30 minutes until well risen and golden brown. Leave to cool on a wire rack. They will keep in a tin for up to 1 week.

Carrot cake energy balls

Power your baby’s day with my healthy take on this sweet treat. Makes 30 balls.

Ingredients:

110g pecans
125g dates
200g carrots, peeled and grated
80g desiccated coconut
¾ tsp. ground cinnamon
¾ tsp. ground ginger
100g raisins
50g porridge oats
2 tbsp. sunflower oil

Method:

  1. Place all the ingredients into a food processor. Whiz until finely chopped.
  2. Shape the mixture into 30 balls. Chill for 1 hour in the fridge. Keep in an airtight container in the fridge for up to 5 days.
