Moroccan carrot and chickpea salad pesto princess

This unusual salad is simple but packed with nutrients – the perfect side for an afternoon braai.

You will need:

Olive oil
3 TbspĀ Pesto Princess Harissa Paste
Salt and pepper, to taste
2 tins chickpeas, drained
6 medium carrots, grated
A handful of coriander, chopped
5 Tbsp double cream yoghurt
Pinch of cumin

How to make the Moroccan carrot and chickpea salad

1 In a small saucepan heat the olive oil, Pesto Princess Harissa PasteĀ and salt and pepper.

2 Combine the chickpeas, carrots and harissa mixture in a salad bowl.

3 Serve with a handful of coriander and cumin-spiced double cream yoghurt.
