lunchbox idea for kids mini pizzas made from leftover flapjacks

Sunday nights are flapjack nights in our house, and there are always leftovers, which I use up as quick and easy pizza bases. Use any toppings you have available and get creative! You can even get the little ones involved in making the pizzas. Just a few seconds under the grill is all you need to create these tasty treats – genius!

You will need:

For the flapjacks

2 eggs

40 ml sugar

375 ml milk

20 ml sunflower oil

500 ml self-raising flour

2 ml salt

For the toppings

Tomato sauce, cheddar or mozzarella cheese, bacon, viennas etc.

How to make the mini flapjack pizzas

  1. To make the flapjacks, beat the eggs and sugar together until well mixed. Add 125 ml ml milk and the oil. Mix the flour and salt and add it gradually, alternating with the rest of the milk to the first mixture to form a smooth batter.
  2. Drop dollops of the batter into a hot, non-stick pan and flip over once bubbles form on the surface (make the flapjacks nice and big if you plan to make pizzas with them).
  3. Allow to cool and use a cookie cutter (optional) to cut out cute shapes – I used a heart cookie cutter. Spread a thin layer of tomato sauce on the flapjacks, sprinkle with cheese and add any other toppings you have available.
  4. Place under a hot grill for about a minute until the cheese has melted. Keep a close eye on the pizzas so they don’t burn. Serve three to four per lunch box.
