Chocolate coconut fudge recipe

We love recipes that are quick and easy, and provide snacks for days – and February is the time to indulge!

This chocolate coconut fudge recipe is a decadent delight that will have coconut lovers swooning. The top layer is a creamy white coconut layer and the bottom layer is a yummy milk chocolate layer.

Ingredients

2 cups sugar
11 large marshmallows
3/4 can evaporated milk
1 packet of milk chocolate chips
1/2 cup of butter

Coconut fudge layer:

2 cups sugar
11 large marshmallows
3/4 can evaporated milk
1 packet of white chocolate chips
1/2 cup of butter
3/4 tsp coconut extract
Shredded coconut

Method

  1. Combine the sugar, marshmallows and milk in a large pan.
  2. Heat and bring to a soft boil.
  3. Boil (soft boil) for 6 minutes, stirring while it boils (this must be barely boiling or it will burn on the bottom).
  4. After 6 minutes of boiling, turn off the heat.
  5. Add chocolate chips and butter and stir until completely combined.
  6. Pour into well-greased 20 x 20 cm pan.
  7. Place in refrigerator for several hours until completely set, then proceed to the coconut layer.
  8. Repeat the process from the bottom layer (as above: combine the sugar, marshmallows and milk in a large pan. Heat and bring it to a soft boil. After 6 minutes, turn off the heat).
  9. Add white chips and butter and mix till melted (if you love peanut butter, use peanut butter chips instead of milk chocolate ones).
  10. Stir in coconut extract.
  11. Pour on top of the chocolate layer.
  12. Gently sprinkle coconut on top of it and lightly press into the top of the fudge.
  13. Slice and serve or freeze and slice.

Tip: Use GLAD small freezer bags or resealable snack bags to keep your sweet stash close at hand!
