Chicken & Tomato Sandwich Squares
Chicken lovers will enjoy this flavourful and succulent sandwich. Easy to make and great as a lunchbox snack.
Tip for lunchbox: Place the lettuce and tomato between chicken pieces to prevent sandwich squares from becoming soggy.
Ingredients
2 sandwich squares
40g smooth cream cheese
15ml basil pesto
A handful of lettuce leaves or rocket leaves, torn
6 slices shaved chicken
1 tomato, sliced
Salt and milled black pepper
Method
- In a small bowl, mix the cream cheese and basil pesto.
- Open the sandwich squares and spread with cream cheese.
- Top the sandwich squares with torn lettuce leaves, shaved chicken and tomato.
- Season with salt and pepper.
- Close the sandwich with the top of the sandwich square.

Toasted Tuna Sandwich
With just a few ingredients, you can whip up this crunchy, good-for-you sarmie. It’s got loads of protein and fresh veggies – a delicious, easy lunch to make on the weekend.
Makes 4 sandwiches
Ingredients
2 cups tinned tuna, drained
2 tomatoes, cored and diced
2 sticks celery, peeled and diced
1/4 cup plain yoghurt
2 tablespoons mayonnaise
8 slices brown bread bread
1/4 cup butter, softened
1 Romaine lettuce, leaves torn
Salt and pepper
Method
- Place the tinned tuna in a mixing bowl and flake with a fork. Add the tomatoes, celery, yoghurt, mayonnaise and seasoning. Stir well to combine.
- Toast the slices of bread under a hot grill or in a toaster until golden-brown.
- Remove and spread with butter. Top four slices with torn lettuce leaves and the tuna salad mixture.
- Place the other toasted slices of bread on top and then cut the sandwiches
Italian-Style Chicken Sandwich Square Melts
Turn chicken schnitzels or breasts into Italian-style sandwiches. Fancy grilled sandwiches bursting with flavour, ideal for picnics and easy dinners.
Ingredients
2 sandwich squares
15ml butter
30ml mayonnaise
6 large basil leaves
2 crumbed chicken schnitzels, cooked and cooled
60ml sundried tomato pesto or tomato pasta sauce
2 slices cheddar or mozzarella cheese
Method
- Open the sandwich squares and butter the outer side of each slice and place onto a board, inner side facing up.
- Spread the mayonnaise onto two of the sandwich square halves and top with some large basil leaves.
- Cut the cooked and cooled chicken schnitzels in half and place on top of the basil.
- Spoon some of the sundried tomato pesto or tomato pasta sauce on top and cover with cheddar or mozzarella cheese.
- Close the sandwich buttered side facing outwards.
- Either grill the sandwich squares in a hot pan, under a grill, or on a panini-style press.
- Cook for 2-3 minutes, per side, or until the sandwich squares are crispy and golden and the cheese has melted.
- Cut diagonally in half. Secure with toothpicks before serving.

Creamy Avocado on Toast
Ingredients
1 brown sandwich square
4 tbsp. cream cheese
1 ripe avocado
Lemon juice to taste
1 sliced tomato
Pinch of salt
Black pepper to taste
Method
- Open one brown sandwich square and toast each slice until golden brown.
- Peel and chop avocado into a bowl, then add lemon juice, salt, and black pepper before smashing it all together using a fork.
- Season the cream cheese to your liking with salt and pepper.
- Spread each toasted square slice with seasoned cream cheese.
- Top with your freshly made guacamole.
- Add the sliced tomato as the finishing touch.

Toasted Turkey Magic
Ingredients
1 brown sandwich square
Turkey roll
1 egg
50-75g cheese
Method
- Separate the brown sandwich square and butter the outside of each half.
- In a pan, fry an egg as per your preference.
- Grate the cheese, then sprinkle over one side of the sandwich square slices.
- Stack your slices of cold meat on top of the cheese.
- Add some more cheese for good measure.
- Top with the other sandwich square slice and then toast until golden brown and the cheese is oozing.
